A Paris: chez Jean Ribou, au Palais, dans la Salle Royale, a l'Image S. Louis, 1680. In-12° (mm 148x90). Pagine [8], 480, [28]. Testatine, iniziali ornate e finalini incisi su legno. 39 silografie nel testo, a illustrare il trattato dedicato all'Ecuyer-Tranchant. Legatura coeva in vitello, dorso a cinque piccoli nervi, scomparti decorati da ferri floreali dorati, al secondo titolo breve in oro. Tagli spruzzati in rosso. Usurati gli angoli e le cerniere, con qualche spellatura. Minimo danno alla cuffia di piede. Buon esemplare, bruniture e fioriture diffuse; qualche alone marginale. Alcune gore, più ampia quella che interessa i primi fascicoli. Piccole mancanze all'angolo inferiore esterno bianco delle carte G9 e Ff1, e al margine esterno bianco della carta O2; minimo strappo al margine esterno bianco della carta Rr4. Al recto della carta di guardia anteriore ex libris alle armi 'Charles Baron de Selby', al verso nota di mano più antica, 'Ce livre a [?]'.  Importante e pratico compendio - qui in quarta edizione - di diversi trattati dedicati agli Officiers de bouche, con una completa e dettagliata descrizione delle sei professioni associate a una grande cucina. La prima edizione fu proposta dal tipografo parigino Jean Ribou nel 1662, e il successo fu immediato, nonostante la raccolta si basa su opere già in precedenza stampate, e non avesse quindi carattere di originalità. Le istruzioni fornite 'pour bien plier le Linge', così come alcune delle silografie a illustrazioni di fantasiosi modi di tagliare arance e limoni richiamano, ad esempio, quelle diffuse qualche decennnio prima dallo scalco padovano Mattia Giegher (vedi lotti 61 e 62). Più volte ristampato nel corso di due secoli, tutte le edizioni secentesche sono di grande rarità. Vicaire, 339; Livres en bouche 140 (ed. 1662): "Ainsi parait le premier corps complet des métiers et savoir-faire de la table du 17e siècle".

[…] Il avait la voix courte, comme essoufflée. […] Il savait que l’ange de la poésie boite et louche et qu’il en tire son charme. Son souffle givrait les vitres. Il n’avait qu’à tacher une feuille, la plier et la déplier, pour épanouir les terribles dentelles du rêve.
