С 1822 г. обучался в Берлинской Академии художеств, затем совершенствовал свое мастерство под руководством Франца Крюгера. С 1828 по 1844 гг. принимал участие в выставках Академии, где его жанровые и военные сцены пользовались неизменной популярностью благодаря изяществу кисти и тонкости наблюдения. Его работы, из которых наиболее известны «Битва под Лейпцигом», «Битва при Денневице», «Прибытие союзников в Париж», «Прощание после боя», «Сцена из Бауценского сражения», высоко ценились прусской и российской аристократией, в том числе императором Николаем !. Произведения Эльсхольца хранятся в Эрмитаже, ГМЗ «Царское Село», Музее-панораме «Бородинская битва» и многих зарубежных музеях.Эпизод из заграничных походов 1813-1814.
